GRAPE VARIETIES & TERROIR: 56% Syrah and 44% Cinsault on limestone from the Hauterivian and Valenginian.
THE VINES: Estate vines located in Aubais and Aujargues. Organically and biodynamically farmed (Demeter). Average yield 40 hl/ha. Harvested by hand.
WINEMAKING: The grapes are destemmed, followed by a 7-day infusion maceration at 20–22°C. Fermentation with indigenous yeasts. Aged 8 months in stainless steel tanks. No added sulphites.
TASTING: The pomegranate colour reflects the elegant fruit forward wine. Peppermint and blueberry add the complexity to this dangerously drinkable wine.
WHEN TO DRINK: To be drunk in his youth and ideal for pizza/pasta parties.
