GRAPE VARIETIES & TERROIR: 74% Grenache & 26% Cinsault on limestone from the lower cretaceous

THE VINES: Estate vines located in Aubais (Gard). Organically and biodynamically farmed. Yield 40hl/ha. Vines planted in 1983. Harvested by hand.

WINEMAKING: We follow the «méthode ancestrale» process. The wines are bottled during fermentation at 28 g/L of residual sugar. Fermentation goes on in the bottle which will dissolve natural bubbles in this sparkling wine. After 9 months ageing on lees, the wines are riddled and disgorged at the estate. Fermentation with indigenous yeasts. Total SO2 15mg/l.

TASTING: The bubbles reveal fresh strawberry and cherry aromas. A brut, thirst quenching pet’nat’ that is perfect for summer days.

WHEN TO DRINK: A lively sparkling rosé wine, perfect for apero or dessert.
