GRAPE VARIETIES & TERROIR: 56% Muscat & 44% Grenache on micaschists.
CUVÉE LE QUAI À RAISINS: Wine made with grapes sourced from Domaine Pouderoux.
THE VINES: Parcels located in Corneilla-la-Rivière (Pyrénées Orientales). Organically and biodynamically farmed by Louise and Léo from Domaine Pouderoux. Harvested by hand.
WINEMAKING: We follow the «méthode ancestrale» process. The wines are bottled during fermentation at exactly 22g/L of residual sugar. Fermentation goes on in the bottle which will dissolve natural bubbles in this sparkling wine. After 9 months ageing on lees, the wines are riddled and disgorged without freezing. Fermentation with indigenous yeasts. Total SO2 20 mg/l.
TASTING: The bubbles reveal aromas of pear and white flowers. Crispy and slight salinity make it very refreshing.
WHEN TO DRINK: Umami is a low alcohol and very fresh sparkling wine! It goes very well with the umami flavors in Asian food.
